Description
In this study, in order to improve the production capacity of the minceum gel and the tissue properties of the produced mold, two types of CMC and copper gum at a concentration of 0.5% and a quenching at a temperature of (C°4, C°25, C°40) and different times (16, 5, 3, 1, 0.5 hours) were used and physical, chemical and sensory analyzes were performed on silver carp loaf. Treatments containing 0.5% CMC gum showed the highest amount of glycolic acid adsorption, yield, protein content and water holding capacity, while the treatment containing 0.5% gum extract had the highest levels of tissue, moisture and ash indexes at medium and high temperatures. He showed a high standard. Coagulation at 4°C had the least effect on the amount of product shrinkage and no significant difference was observed among other temperatures.
